A Mouthwatering Recipe For One Of The Best Burgers Ever!
It's my humble opinion that one of the BEST burgers ever is a simple Green Chile burger. Here, I am excited to share with you a super easy, no frills recipe for a mouthwatering burger which also includes lots of cheese! This recipe is:
- Absolutely delicious! A juicy burger topped with melty cheese is a winner every time!
- Not overly spicy! I absolutely love spicy food, but here I am using the mild poblano pepper which gives just enough delicate heat to satisfy most of us.
- A bit sweet! The roasted onions included in this recipe provide a lovely sweet flavor as a balance against the roasted poblanos.
- Easy! Roasting the onions and poblanos is easy and mostly hands off, and pan frying the burgers works a treat!
- Inspired by the great Green Chile Burger of New Mexico!

Where Did The Green Chile Burger Come From?
Kudos to New Mexico! This great state is where this amazing burger came from and here is a fun story which I found on NewMexicoCultural.com! One commonly told story involves scientists who were working on the Manhattan Project in New Mexico. They would order burgers at The Owl Bar and Cafe with some green chile on the side. It seems one day the dishwasher was a no show at work. The dishes that normally held the green chile were dirty, and so they put the green chile on the burgers instead. A MASTERPIECE was born! I LOVE this story!

What Ingredients Do I Need To Make This Burger?
The ingredients you will need for this burger are:
- Ground beef (I used grass fed 85% lean; you can also use 80/20 ground chuck which is most commonly used for burgers)
- Poblano peppers - feel free to sub the New Mexico hatch chile if you have this available!
- Onion
- Olive oil
- American cheese - I favor this for burgers because it's tasty and sooo melty!
- Hamburger buns
- Butter - to toast the buns and fry the burgers in
- Salt
- Pepper
- Garlic Powder
- Your favorite condiments: ketchup, mayo, mustard, etc.
Now let's move on to the easy instructions to make this DELISH burger!
Instructions
Start by preheating your oven to 400F. Dice the poblanos and onion, and toss with some olive oil and seasonings. Once ready, roast for around 30 minutes.
While your peppers and onion are roasting, butter both sides of your hamburger buns and lightly toast each side in a skillet.
Next, season your ground beef with a mixture of salt, pepper, and garlic powder. Shape the ground beef into 3 equal portions. It's very important to LIGHTLY MIX as heavy handed mixing doesn't work well for burgers!
Now simply pan fry each side in a bit of butter. Mouth starting to water yet? 😃
I aim for a burger that is between medium and medium well done. Therefore I fry the first side for around 4 minutes on medium high, and the flip side for around 3 minutes. Please feel to adjust your cooking time to suit your tastes.
Now is my favorite part...adding the CHEESE! I do this by layering a couple of pieces of American cheese on the top of the burgers during the last 45 sec to 1 minute of frying time on the 2nd side until the cheese is nice and melty!
Finally it is time to assemble your burger! Simply place the cheese laden burger on the bottom bun, top with as much of the roasted green poblano/onion mixture as you like (approximately ⅓ can be used for each of the 3 servings), and top with the top bun!
How To Serve This Dish!
I personally think that this burger tastes perfect as is! However, feel free to add your favorite condiments such as ketchup, mustard, or mayo. Fries would be a great accompaniment!

Easy and Delicious Green Chile Burger With Cheese!
Equipment
- Skillet cast iron is preferred
- rimmed baking tray to roast the poblano peppers and onion
Ingredients
- 1 lb ground beef I used grass fed 85% lean; you can also use 80/20 ground chuck which is most commonly used for burgers
- 2 each Poblano peppers on the larger side; ribs and seeds removed and then diced; feel free to sub the New Mexico hatch chile if you have this available!
- 1 onion diced
- 1 tablespoon olive oil
- 6 slices American cheese 2 slices for each burger!
- 3 hamburger buns
- butter for toasting the buns as well as frying the burgers
- 1 ts salt split: ½ ts for the veg mixture and ½ ts for the ground beef
- 1 ts pepper split: ½ ts for the veg mixture and ½ ts for the ground beef
- ½ ts garlic powder
Instructions
- Start by preheating your oven to 400F. Remove the ribs and seeds from the poblanos. Dice the poblanos and onion, and toss with the olive oil, ½ ts salt and ½ ts pepper. Once ready, add to a rimmed baking tray and roast for around 30 minutes. Check it at around 15 minutes in and toss if necessary to prevent burning and encouraging even cooking.
- While your peppers and onion are roasting, butter both sides of your hamburger buns and lightly toast each side in a skillet set to around medium.
- Next, season your ground beef with a mixture of ½ ts salt, ½ pepper, and ½ ts garlic powder. Shape the ground beef into 3 equal portions and try to flatten them down and make them a bit on the thin side. It's very important to LIGHTLY MIX as heavy handed mixing doesn't work well for burgers!
- Now simply pan fry each side in a bit of butter on medium high. For a burger closer to medium well, fry the first side for around 4 minutes, flip, then fry the flip side for around 3 minutes. Please feel to adjust your cooking time to suit your tastes.
- Adding the CHEESE! Layer a couple of pieces of American cheese on the top of the burgers during the last 45 sec to 1 minute of frying time on the 2nd side until the cheese is nice and melty!
- Time to assemble your burger! Simply place the cheese laden burger on the bottom bun, top with as much of the roasted green poblano/onion mixture as you like (approximately ⅓ can be used for each of the 3 servings) and top with the top bun!
