What startled me was that the description of this dish on TasteAtlas.com, known as "Qing jiao yu mi" (Corn with peppers), didn't contain either chilies or Sichuan peppercorns!

- Bell peppers - I've used a red bell pepper here, but you can use a green bell pepper, or for the most fun with this recipe use both green and red bell peppers!
- Salt - plenty of salt truly elevates this dish to something very special
- Vegetable oil
Four ingredients are all you need to make this delicious corn recipe, full of amazing flavor, from the Sichuan province of China!

I highly recommend using a wok, however you can use a large frying pan or cast iron skillet if you don't have a wok.
🔪 Instructions
Begin by husking your fresh ears of corn. Remove the leaves and the silk from each ear of corn. Then place your corn on a cutting board and remove the kernels using a sharp knife.
Heat the vegetable oil on a high heat in your wok or skillet.
Once the oil is hot and shimmering, add the diced bell peppers and corn.

Stir to combine, then add the salt.

Continue to stir fry for around 2-3 minutes or so until the vegetables are crisp tender.

- 1 red bell pepper diced and ideally cut to approximately the same size as the corn kernels (Select a large sized red bell pepper); can sub a large green bell pepper, or use half a green bell pepper, and half a red bell pepper
- ¼ cup vegetable oil
- 1.5 ts salt this may seem like a lot of salt, but the salt really makes this dish. If however you think this is too much, by all means adjust down.
