If you are like me, I prefer to have one multipurpose knife, rather than several knives, that I can use for slicing different foods. So a good quality Japanese Santoku knife fits the bill!
Santoku means "three virtues" or "three uses." Santoku knives are named for their ability to make easy work of slicing, dicing, and mincing. They are also ideal for cutting meat, fish, and vegetables with ease.
The Zaku Yakiurushi Damascus Santoku knife has a razor-sharp edge, with a shorter and straighter blade ideal for precise chopping and slicing.

The knife characteristics that standout are the gorgeous Yakiurushi handle, and the incredible layers of Damascus steel on the blade.
The stunning wood based handle design looks as if it has been flame charred. In fact Yakiurushi is a combination of the words "yaki" which means "cooked over direct heat", and "urushi," which is a type of lacquer. In addition to the artistry of this technique, it also makes the handle resistant to water.

And the blade is even more stunning, with its layers and ripples of Damascus steel. The blade material is Molybdenum Vanadium Steel, and the blade features watery and wavy patterns with a hammered finish from hammering many layers of steel.

This Knife Is Easy To Use!

I find this knife incredibly easy to use, and have become best friends with it!
The wood handle fits comfortably in my hand. At 136g (about 0.3 lb), the knife is incredibly light and enables you to slice meat, fish, and vegetables with precise cuts.
I started using this knife right after I had an injury which affected my hands, shoulder and arm. And I can't tell you how happy I was to have such a light knife that helped me prep food effortlessly during this time!
It's great for smaller hands, and perfect for daily home use as well as for beginner or hobby cooks.
The razor-sharp blades on these knives glide through your food with ease, and are truly a joy to use!
It effortlessly slices through tomatoes and onions, and I was able to cut super thin slices of my lamb roast and ahi tuna.
