Poaching Salmon Is Easy and Quick!

Poaching salmon is one of my favorite ways of cooking this awesome fish! It's super easy and quick, and the end result is a flavorful and moist fish every time.

How quickly you can bring this to your table does depend on the thickness of the salmon you are using. But thick pieces poach quickly too! I used a thin piece of salmon and poached for around 4 minutes each side. Now THIS is FAST food!

What Is Caldereta?

Caldereta, also spelled Kaldereta, is a stew made with goats meat from the Philippines. However, other variations exist and beef is commonly used in this amazing stew. This stew also includes vegetables such as potatoes, carrots, onions, bell peppers, as well as olives. The recipe you find here uses beef.

The meat is stewed with these vegetables along with a liver paste/spread. This spread enriches the taste of this stew like you wouldn't believe!

"Caldereta" comes from the Spanish word "caldera" which means cauldron. The Philippines were occupied by the Spaniards for many years. The Wikipedia article on caldereta mentions that this dish is similar to meat stews from the Iberian peninsula which were brought to the Philippines by the Spaniards.

Korean Soft Tofu Stew aka Sundubu Jigae

Jigae is a Korean stew. Sundubu refers to an extra soft tofu. Therefore Sundubu Jigae is a soft tofu stew. Which is absolutely delicious by the way!

In addition to the tofu this stew usually includes some vegetables, gochujang (Korean red pepper paste), and gochugaru (Korean red pepper powder). You can also include some seafood or a bit of meat (usually beef or pork).

It is traditionally cooked directly in the serving vessel, called a dolsot. The dolsot is usually porcelain or ceramic, or made out of stone. It's so lovely to dine on this dish from the dolsot, which keeps your food piping hot!

What is Sinigang?

Sinigang...where have you been all my life? This AMAZING soup or stew is one of the most popular dishes in Filipino cuisine! It is characterized by being sour, tangy, and intensely savory. This sour taste is usually due to tamarind, although guava is commonly used as a souring agent as well.

Sinigang means "stewed" and the dish consists of vegetables and meat (i.e.pork, beef) or seafood (fish or shrimp). Common vegetables used in this Filipino dish include sitaw (long beans), tomatoes, onions, water spinach (kang kong), okra, daikon radish, long green peppers. The perfect condiment for this soup is fish sauce!
