So here are the ingredients you will need to make your New Mexico red chile sauce:
- New Mexico red chile pods - I used Barker's red chile pods; the New Mexico dried red chiles are the main ingredient in this recipe, so be sure to use good quality dried chile pods for best results
- Chicken broth (can sub water or chicken stock)
- Olive oil (can sub vegetable oil)
- Fresh garlic
- Onion
- Oregano, or Mexican oregano
- Salt
- Black Pepper
- Red chile powder - adding this adds extra depth of flavor, and is highly recommended
You should be able to get most of these ingredients at your local grocery store. However, if you can't easily get your hands on the New Mexico chiles or New Mexico red chile powder, no worries as I have linked to these products on Amazon (affiliate links). Here you will find a variety of dried chiles and chile powders with different heat levels to suit your tastes.
Now I'll guide you step by step and will show you how easy it is to make this flavorful sauce!
🔪 Instructions
Begin by toasting the red chile pods on medium heat in a cast iron pan. Toast for around 2 minutes, or until fragrant, using a pair of tongs to turn them every so often. Allow to cool, and then stem and deseed the chile pods.
Add the olive oil to your skillet on medium heat. Once the oil is hot, add the minced garlic and onion, and cook for 3 minutes or until softened, stirring often.
Now add the 3 cups of water or chicken broth and the chile pods to the softened garlic and onion. Bring to the boil on high heat, and then simmer on low heat for around 20 minutes or until the chile pods have softened.
If the mixture looks dry, add a little broth or water to keep it moist.
Place the chile pod mixture in your blender, and add the seasonings. Blend until the sauce is nice and smooth. If you want, you can add additional broth or water to thin the chile puree sauce down to your liking. Taste and add additional seasonings if necessary.
If you would like a smoother texture, you can use a mesh strainer to help remove any solids. I personally like my sauce a bit chunkier, so I usually skip this step.

I think blenders will give you a smoother sauce, however you can use a food processor to make this sauce if you prefer.
