Alaskan Smoked Salmon, Cream Cheese and Capers Bagel

I dream of visiting all of the National Parks in the US. Did you know that Alaska is home to 8 National Parks?  I'll be thrilled if I can just get to one of them!

Alaska is home to unparalleled beauty and I hope everyone can visit someday.  And the food?  It's my understanding that Alaska has some of the most delicious food out there!

Alaskan Salmon and Cream Cheese Bagel

I chose a recipe to honor Alaska that is not quite a dish Alaska is known for. This recipe for a Salmon and Cream Cheese Bagel includes wild Alaskan salmon. Wild Alaskan salmon is very well known for its amazing taste and health benefits.

Alaskan Salmon, Cream Cheese, and Capers Bagel

The delicate flavor of Alaskan salmon is wonderful, smoked or not. It is considered a Superfood, and it contains omega 3 fatty acids.  So, I definitely think it's a great idea to eat more salmon! Wild Alaskan Smoked Salmon, Lemon, and Dill

The sandwich also includes lots of yummy cream cheese, fresh dill, sliced red onions and capers! Each ingredient is full of flavor on its own. Combined they are an amazing flavor bomb!

In conclusion, please use wild Alaskan salmon in this sandwich. Wild Alaskan salmon tastes better and is also better for you. You will definitely love the amazing flavors in this Salmon and Cream Cheese Bagel. Enjoy a taste of Alaska!

Alaskan Smoked Salmon, Cream Cheese, and Capers Bagel

Enjoy this sandwich using smoked wild Alaskan salmon.  The flavors are amazing, the colors are beautiful, and you should be able to fully taste the delicious and delicate flavors of this salmon.

Ingredients
  

  • 4 oz wild Alaskan smoked salmon
  • 2 bagels can use thin if preferred
  • red onion thinly sliced
  • cream cheese whipped
  • 1 tablespoon capers
  • fresh dill few sprigs
  • 2 lemon wedges

Instructions
 

  • Lightly toast your bagels
  • Spread cream cheese on each slice of bagel
  • Layer bottom side of the bagel with 2 oz of wild Alaskan salmon, thinly sliced red onion, ½ tablespoon of capers, and some dill.

  • Squeeze a bit of lemon, then place the top part of the bagel on the sandwich.

I visited Miami over 20 years ago and can't believe it has been that long! The need to go back is starting to get stronger. 🙂 I remember being thrilled at the Cuban accents I heard for the first time. Road 66 Road Trip

Many years ago, my husband and I took a road trip that mostly included traveling on the Historic Route 66 through Texas, New Mexico, and Arizona.  We veered off the Route to get to Grand Canyon National Park, which was absolutely awe inspiring. 

We had an outstanding meal at a restaurant close to the park, which is one of my favorite memories. I don't remember the name of the restaurant, but boy do I remember the meal!  It was a Navajo Taco, and it was enormous!!

Alabama Inspired Fried Green Tomatillos

Do you remember the film called Fried Green Tomatoes?  This film was based on a book by Fannie Flag called Fried Green Tomatoes at the Whistle Stop Cafe.  The setting was Whistle Stop, Alabama, and from here comes our Alabama inspired recipe...delicious fried green tomatillos!! 

Tomatillos?!?! I tried so hard to find green tomatoes at my local grocery stores but had no luck, so I figured tomatillos, which are green and look like a tomato, might be a good substitute for green tomatoes! Tomatillos are called "tomate verde" in Mexico. This means green tomato, so that's good enough for me! Alabama is known for fried green tomatoes, and you can find it at most restaurants and diners in Alabama. Hence we will give all credit to Alabama for inspiring this delicious dish.

If you are ever in the Birmingham, Alabama area, it would be fun to stop at the Irondale Cafe in Irondale, Alabama.  The Irondale Cafe (which opened as a hot dog stand in 1928) was the inspiration for Fannie Flag's book, and was the original Whistle Stop Cafe.  Dining at the Irondale is definitely on my list of things to do if I ever visit the Birmingham area.

To conclude, there's nothing like down-home Southern cooking! I hope you will find that the Mexican twist on this dish is just as good. 🙂

Ingredients
  

  • 3-4 green tomatillos very firm and sliced thickly
  • 2 eggs beaten lightly
  • 2 tablespoon milk
  • ½ cup flour
  • ½ cup corn meal
  • ½ ts salt
  • ½ ts pepper
  • ½ ts cayenne
  • ½ ts garlic powder
  • 1.5 cups vegetable oil

Garlic Mayo

  • ½ cup mayo
  • 2 cloves garlic minced
  • pepper to taste

Instructions
 

  • Make the garlic mayo by combining all ingredients and refrigerating until ready to use. 
  • Slice the tomatillos thickly and season both sides with salt and pepper.

  • Set up 3 different containers. One will contain the flour and spices, one the egg and milk, and the other the corn meal.
  • Add salt, pepper, cayenne and garlic powder to the flour and mix.  Lightly beat the eggs with the 2 tablespoons milk. Dredge the tomatillos in the flour mixture. Dip the tomatillo slices into the beaten eggs. Let the excess egg run off the tomatillo. Dredge the tomatillo in the corn meal.
  • Get the vegetable oil nice and hot in a heavy skillet.  Fry for 2-3 minutes each side until nice and brown, and place on paper towels to absorb the excess oil.

Notes

Serve these fried green tomatillos with lots of garlic mayo!  These can be a great addition to hamburgers as well!

Arkansas Fried Pickles

I've only passed through Arkansas on the way to a different destination, but I hope to one day visit the Hot Springs area to explore Hot Springs National Park (U.S. National Park Service) as well as the Garvan Woodland Gardens which is the botanical garden of the University of Arkansas.  At the Woodland Gardens, you can visit the Anthony Chapel, which is a  stunning cathedral made out of glass and wood Anthony Chapel Complex - Garvan Woodland Gardens.  


It should come as no surprise that a food that is famous in Arkansas is a fried delicacy!  Let me introduce the fried pickle!  I was skeptical about it until I tasted it and now I am a fan.  It makes a great party/finger food/appetizer, and a talking point to people who've never imagined eating such a thing as a fried pickle.  Try it and see for yourself. 😉

Here Is An Easy Fried Pickles Recipe Just For You!

Around 15 minutes is all you need to prepare this delicacy! You simply need to bread the pickles in a mix of seasoned corn meal, and then fry in a skillet. Truly it's that easy!

Fried Pickles

Arkansas Fried Pickles

Fried Pickles? YES! These pickles are absolutely delicious and super easy to make! Serve with ranch dressing and enjoy this fried delicacy!

Ingredients
  

  • 30 ea dill chip pickles
  • 1 egg
  • 1 tablespoon milk
  • ½ cup corn meal
  • ½ ts pepper
  • ½ ts salt
  • ½ ts cayenne
  • vegetable oil
  • Ranch dressing to serve

Instructions
 

  • Pat dry your pickles.
  • Lightly whisk the egg and 1 tablespoon milk in a small bowl. Set aside.

  • Prepare cornmeal mixture - add the pepper, salt, and cayenne to the cornmeal in it's own bowl.

  • Dip each chip into the egg and milk mixture (let excess run off) and then coat in the cornmeal mixture.

  • In the meantime, pour enough vegetable oil into a heavy skillet to cover it in about ½ inch of oil. 
  • Heat the oil on med high until it is shimmering.
  • Drop each pickle into the oil and turn over after about 20-30 seconds.  You may need to keep turning the pickles a few times until both sides are golden brown.

  • Place the fried pickles onto a paper towel lined plate to absorb excess oil.

Notes

That's it! Enjoy your pickles on their own, or dipped into a delicious Ranch dressing, and enjoy a taste of Arkansas!
Please note:  this recipe is easily halved.  Do use 1 egg and 1 tablespoon milk but halve all the other ingredients for 2 servings.  You will have some of the egg and milk mixture leftover.  I microwaved the leftover mixture and gave it to my dog Toby.  No waste! 🙂

Eating this delicious Colorado Green Chili brings back so many precious memories.

I first experienced Colorado when my dad took us on a family vacation.  Dad loved to travel, and he wanted us to experience Colorado for its beauty and majesty. 

My husband and I spent a few days driving up to Pike's Peak on my second visit years later. We also visited Rocky Mountain National Park, which is a gem of a park!

New York Style Hot Dogs

One of these days I will make it to New York and enjoy a New York Style Hot Dog!  The Big Apple is on my list to visit!! However until I can get there, I will have to let my taste buds, and also film, transport me.

Sunday nights are movie nights at my home. I love to cook a meal on movie nights that has something to do with the film we are watching.  Usually either the setting of the movie, or food actually eaten or highlighted in the film can inspire the meal.

Last Sunday we selected a Richard Gere film from 2016 called Norman:  The Moderate Rise and Tragic Fall of a New York Fixer.  In this case the setting definitely inspired the meal for the evening.   Hot dog carts can be found all over Manhattan, so it wasn't difficult to settle on hot dogs as the meal to accompany this film.  

New York Style hot dogs are in a word...amazing!  When I do make it to New York, I will tow a beeline straight to Nathan's on Coney Island. Ever heard of their famous Hot Dog eating contest?! Nathan's was started in 1916 by Polish immigrant Nathan Handwerker, and it boasts of being the most famous hot dog in the world.  I quite agree..it's good!!

New York Style Hot Dog

Enjoy a taste of New York City with these sauerkraut and spicy brown mustard laden New York Style Hot Dogs!

Ingredients
  

  • 4 ea Nathan's Hot Dogs
  • 8 oz sauerkraut I used Frank's Hot Dog Kraut
  • 1 tablespoon olive oil
  • 1 medium onion thinly sliced
  • ½ cup ketchup
  • ½-1 ts cayenne
  • spreadable butter
  • 4 each hot dog buns
  • 4 oz spicy brown mustard

Instructions
 

  • Heat up 1 tb olive oil in a skillet on med - med high heat.   Once heated,  add the onion to the skillet, and cook until lightly browned.
  • Add the ketchup and cayenne pepper, and cook for about 1 minute. Then  keep onion mixture warm while you prepare the hot dogs and buns.

  • Cook the hot dogs in a skillet until golden brown.    
  • Preheat your broiler.  Open the hot dog buns and spread a light layer of spreadable butter on the insides of the bun. Toast the hot dog buns under a broiler under just lightly brown. Watch this closely so they don't burn!                                                           
  • Place each hot dog in a bun and top with sauerkraut, some of the onion mixture, and as much spicy brown mustard as you'd like!
