So here are the delicious FRESH ingredients you will need for this classic Cajun side dish:
- Fresh corn! You can sub canned corn, but fresh is best!
- Butter
- Garlic
- Yellow onion
- Green bell peppers
- Jalapeño pepper
- Celery
- Fresh thyme
- Cajun seasoning - I love Nunu's! Can also use Creole seasoning
- Tasso - you can sub bacon if you can't get your hands on tasso
- Bay leaf
- Roma tomatoes
- Heavy cream
- Parsley
- Salt and black pepper - optional seasonings added to taste
Also consider adding some cayenne pepper or a few drops of your favorite Tabasco hot sauce if you'd like to spice things up!
So let's roll up our sleeves and get ready to chop and dice!

Prepare your vegetables, including your corn. After removing the leaves and silk, use a sharp knife to cut off fresh corn kernels for use in this corn recipe.
Add the butter to a large skillet or Dutch oven on medium heat, and melt the butter. Once melted, add the garlic, onion, green bell pepper and jalapeno. Cook for 5 minutes, stirring often, until the vegetables are softened.
Now add the celery, thyme, Cajun seasoning, tasso, and bay leaf. Saute this mixture for 2 minutes, stirring often.
Time to add the tomatoes, corn, and heavy cream. Stir well, and cook this mixture for around 10-15 minutes, stirring occasionally. During this time if the mixture looks too dry, you can add some broth or chicken stock, water, or additional cream.
The last final touch is to add the parsley and adjust for taste by addition additional Cajun seasoning and/or salt and pepper.
Your maque choux is now ready to serve!

Easy Cajun Corn Maque Choux Recipe With Tasso
Equipment
- Large skillet or Dutch oven
Ingredients
- 3 ears corn remove leaves and silk, and cut off the kernels for use; can also use 2x 15 oz cans of drained corn if you prefer
- 3 tablespoon butter
- 4 each garlic minced
- ½ yellow onion chopped (select a medium sized onion)
- ½ green bell pepper chopped
- 1 jalapeno deseeded and chopped
- 1 stalk celery diced
- 2 teaspoons fresh thyme can sub dried thyme
- ½ tablespoon Cajun seasoning use your favorite! Can also use Creole seasoning
- ⅓ cup tasso chopped; can omit or sub 3 slices of chopped bacon
- 1 bay leaf
- 2 roma tomatoes chopped (select tomatoes on the larger size)
- ½ cup heavy cream
- ⅓ cup parsley chopped
Optional
- salt to taste
- pepper to taste
- Chicken stock or broth
Instructions
