🥘 Ingredients

Here are the simple ingredients you will need to make this relish recipe:

  • Raw beetroot - I used red beets this time, but golden beets would be amazing next time!
  • Apple - I used Granny Smith, but feel free to sub any apple of your choice
  • Onion
  • Apple cider vinegar
  • Salt
  • Ginger
  • Cayenne pepper
  • Ground cloves
  • Olive oil

These ingredients will combine to give you a tangy relish with an earthy sweetness which you will relish ha ha!

So now let me take you through the easy instructions!

🔪 Instructions

Begin by peeling the beets using a vegetable peeler.

Shred the peeled beets and apple, and mince the onion and ginger.

The easy way to shred the beets and apple is to use a food processor with a shredder attachment. This will help you to shred the beet and apple quickly and easily.

Combine all of the ingredients in a large saucepan or Dutch oven and stir to combine.

Bring to the boil then simmer covered around 30-40 minutes.

Bring to a rolling boil on high heat, and then lower the heat to a low simmer and cover. Cook for around 30-40 minutes (or until the relish is tender), stirring every so often. If there is too much moisture, you can uncover the pan and cook off some of the moisture.

Taste and add more salt if you desire. The relish should be a little sweet, but if it's not sweet enough for you you can add a bit of sugar.

Cool, place in an airtight container or glass jar, and chill before enjoying!

Suggestions For Serving

One of my favorite ways is to serve crackers with goat cheese topped with some beet relish. I promise you, this is so so good!

Some other ways to enjoy your beetroot relish are:

  • Add to your burgers (it's the Kiwi way!)
  • On hot dogs
  • As a condiment to sandwiches or alongside roasted meats (great with lamb and pork chops)
  • Add to salads
  • Stir into sour cream and enjoy as a dip or add to wraps
  • Top hard-boiled eggs with a spoonful
  • Include in your cheese platter

You'll always want to have some of this delicious relish available in your fridge!

  • food processor with shredder attachment this is optional, but very helpful to mince the onion and ginger, and shred the beetroot and apple quickly and easily
  • large saucepan or Dutch oven with cover for cooking the relish

Ingredients
  

  • ½ lb raw beetroot peeled and shredded
  • 1 each apple I used Granny Smith; no need to peel the apple
  • ½ each onion minced
  • 2 tablespoon apple cider vinegar
  • ¼ ts salt
  • 1 inch ginger minced
  • ⅛ ts cayenne
  • ⅛ ts cloves ground
  • 1 tablespoon olive oil

This relish can be enjoyed right away.  However the flavor improves over time so if possible wait a few days before eating! 
If you prefer a sweeter relish, feel free to add sugar to taste.
