Gruyere is a firm and nutty tasting Swiss cheese that is named after the town of Gruyères in Switzerland. It is absolutely incredible in biscuits, as I'll demonstrate to you in this Gruyere drop biscuit recipe.

And believe it or not, you won't need any self-rising flour or baking powder to make these tender biscuits!

  • There's almost nothing better than fluffy homemade biscuits, especially when they are bursting with the nutty cheesy flavor of Gruyere cheese! Gruyere adds a distinctive flavor to the biscuits and makes the recipe stand out compared to traditional biscuit recipes.
  • These easy homemade biscuits don't require special equipment like a pastry cutter rolling pin, or pastry blender. These are made by simply scooping up the dough and dropping it on a cookie sheet by tablespoonfuls.

🥘 Ingredients

You only need a few simple and basic ingredients to make these easy Gruyere drop biscuits:

  • Whole milk - please use regular milk (not skim milk) for this recipe
  • Salted butter (half a stick of butter)
  • All purpose flour
  • Eggs
  • Gruyere cheese - for the best results buy the hard cheese and grate it yourself using a cheese grater or box grater (don't buy cheese that has already been grated)
  • Salt
  • Pepper
  • Nutmeg

These simple ingredients can be found at your local grocery store.

🔪 Instructions

Preheat your oven to 400F.

Whisk Eggs And Salt

Whisk the eggs and ½ teaspoon salt together in a small bowl, and then set it aside.

Prepare The Dough Mixture

Add the milk, water, and butter to your large saucepan on medium-high heat, and bring it to the boil. When it boils and the butter has melted, remove the saucepan from the heat, and add all of the flour. Mix this with your wooden spoon until the ingredients cohere together and form a lump.

Bring to the boil and melt the butter...

Now add the flour...

Mix well until the ingredients come together!

Lower the heat to medium-low, and then place the saucepan back on the stove for 2 more minutes, mixing with your wooden spoon the entire time. Take this off the heat, and place the flour mixture in your mixing bowl. Allow to cool to room temperature for 10 minutes.

Put the dough in your mixing bowl and cool for 10 minutes.

After cooling, add the egg and salt mixture, and mix on low until this is incorporated into the dough mixture. Mix for around 2 minutes if using your stand mixer or electric hand mixer, and around 5 minutes if mixing by hand.

Mix for 2 minutes with your stand or hand mixer.

Add The Gruyere Cheese And Spices

Add the Gruyere cheese, pepper, and nutmeg, and mix until these ingredients are well incorporated.

Bake The Biscuits!

Drop by heaping tablespoonfuls of biscuit dough onto your cookie or baking sheet.   Line the sheet with a silicone baking mat or some parchment paper for easier cleanup.

You should get around 12 drop biscuits. Space them apart from each other, and bake in your hot oven for approximately 20 minutes or until golden brown.

  • stand mixer or electric hand mixer; this is optional but it makes the job easier!
  • mixing bowl use the one from your stand mixer or another large sized mixing bowl if you will use an electric hand mixer or your hand
  • Small bowl to whisk eggs and salt
  • Oven
  • wooden spoon
  • large saucepan can also use a Dutch oven
  • Cookie or baking sheet line this with a silicone baking mat or some parchment paper for easier cleanup

Ingredients
  

  • ¼ cup whole milk
  • ¼ cup water
  • ¼ cup salted butter this is 4 tablespoons (half a stick of butter)
  • ½ cup all purpose flour
  • 2 large eggs
  • ¾ cup Gruyere cheese finely shredded or grated
  • ½ ts salt
  • ⅛ ts pepper
  • ⅛ ts nutmeg

  • Preheat your oven to 400F.

Notes

I recommend using Gruyere bought in a block that you grate yourself.  This will give you the best flavor and results.
You can increase the amount of Gruyere cheese to 1 cup if you like! 
If you have a whole block of Gruyere, you may find the Zyliss Cheese Grater handy for grating the cheese.
