Here are the ingredients that you will need to make this simple side dish:
- Fresh green beans - (also known as string beans); feel free to substitute beautiful haricot vert if you can find them!
- Lemon (we'll use both the lemon juice and lemon zest)
- Pistachios
- Fresh Garlic - fresh is best, but if you don't have it you can substitute garlic powder
- Extra virgin olive oil
- Salt
- Black pepper (fresh ground pepper would be great!)
- Parmigiano Reggiano - I highly recommend buying a block of Parmesan cheese and finely grating it just before adding to your vinaigrette for the best flavor
You should be able to find all of these ingredients at your grocery store, or even better grab your green beans from your local farmers market if you can!

For best results, don't overcook your green beans. You want them slightly crisp and not mushy and overcooked.
Use a bag of "steam in the bag" green beans that you can cook in your microwave to make things quicker and easier for you.

Ok let's get ready to enjoy the process of making this incredible dish!
Cook your green beans. To make things easy, I used a steam in the bag of green beans which I cooked in my microwave for 4 minutes.
If you are boiling your green beans, add a teaspoon salt to a large pot of water and bring it to the boil. Using a sharp knife, top and tail your green beans, and then add them to the water and boil gently for 4-5 minutes. Drain and set aside.
Finely chop the pistachios. (I put them in my food processor and pulsed a few times to chop them).
Prepare your vinaigrette by adding the zest of one lemon and its juice to a small bowl, and the minced garlic. Whisk this together.
Now add the olive oil, and whisk well.


It's time to add the salt and pepper, and the finely grated Parmigiano Reggiano. Whisk again.


Finally add the chopped pistachios and whisk or use a spoon to stir and combine everything very well. Taste and add additional salt or pepper if desired.


Dry the green beans of any excess water if necessary, and then add them to a large bowl. Add the pistachio garlic vinaigrette, mix well, and enjoy!

Equipment
- Small bowl to make the vinaigrette
- large bowl to combine the green beans with the vinaigrette
- Medium Saucepan to cook the green beans
Ingredients
- 12 oz green beans topped and tailed; to make things easier, I used a steam in the bag green beans which I cooked in my microwave
- ⅓ cup pistachios finely chopped (I put them in my food processor and pulsed a few times to chop them); I recommend using roasted and salted nuts
- 1 small lemon zested and juiced
- 2 each fresh garlic cloves minced; fresh garlic is recommended but you can substitute garlic powder to taste
- ¼ cup olive oil
- ¼ ts salt
- ¼ ts black pepper
- ¼ cup Parmesan cheese finely grated; for best results use Parmigiano Reggiano
