One regret I have is not having discovered Kotlety Pozharskie, or Russian Ground Chicken Cutlet prior to now. These Russian ground chicken cutlets are out of this world delicious!
This Russian chicken dish is not as well known as Russian Chicken Kiev, however this great kid friendly dish deserves a place at your table!

🥘 Ingredients
Here are the simple ingredients that you will need to make this delicious ground chicken dish:
- Ground chicken
- White bread (with crust removed)
- Milk
- Butter
- Panko (or breadcrumbs)
- Nutmeg - sub garlic powder if you prefer
- Salt
- Black Pepper
You won't believe how moist your cutlets will be due to incorporating milk soaked bread and butter into the ground chicken mixture!
So let's make this delicious Russian ground chicken dish!
🔪 Instructions
Remove the crusts from the bread slices. Soak in milk for approximately 15 minutes. After soaking, squeeze out the milk, and place on the side.
Meanwhile, soften 4 tablespoons of butter.
Then add your ground chicken to a large mixing bowl. Season chicken with nutmeg, salt, and pepper. Now add the 4 tablespoon of softened butter, and the bread (milk has been squeezed out). Mix very lightly with your hands (do not overdo it!).
Once mixed form into cutlets (should be enough for 6). If you have a hard time shaping the mixture into flat cutlets no worries, just shape them the best you can.
Dip each cutlet into the panko making sure the entire cutlet is covered.
Warm up a large pan or skillet on medium-high heat. Add the remaining 2 tablespoon of butter (or sub olive oil), and once melted add your cutlets. Cook approximately 6 minutes on each side, or until browned and cooked through to 165F. If the cutlets are browning too quickly or look like they are going to burn, you can lower to medium heat if necessary.
You can use an instant read thermometer to check that the internal temperature of the cutlets have reached 165F, which is the recommended internal temperature as per the USDA.
You can drain the chicken pieces on paper towels if you want to soak up some of the oil.
Your juicy ground chicken cutlets are now ready to enjoy!
What To Serve With Russian Ground Chicken Cutlet
These Russian ground chicken cutlets make a quick, easy, and inexpensive main course! Served with egg noodles or a bed of rice, and a side dish made of creamed spinach and mushrooms, and you have a superb delicious meal!
The recipe I used for the vegetable side is Creamed Spinach and Mushrooms, from the site Produce for Kids. I didn't intend for this meal to be "kid friendly," but I believe kids would absolutely adore the chicken cutlets, the egg noodles, and the creamed spinach and mushrooms!
Add a red/pink hued sour cream to the egg noodles as the finishing touch. This is so easy to make! Pour a splash of milk to ¼ cup of sour cream (milk will loosen up the sour cream). Add in ½ ts of paprika and there you have your pink hued sour cream.
How about serving a little Catalina dressing or Russian salad dressing on the side? You could use these as dips for your cutlets, or perhaps pour a little Thousand island dressing over your ground chicken cutlets for a little extra flavor.

Your oven is a great tool to reheat your leftover cutlets. Place the cutlets on a baking dish lined with aluminum foil. Place in a preheated oven at 375F, and bake for around 10 minutes or until the cutlets are completely heated through.
Consider serving some egg noodles, fresh white rice or brown rice along with your ground chicken cutlets. A nice salad or some of your favorite roasted veggies would be perfect to round out your meal! Jazz up the cutlets by serving an easy sauce or maybe some creamy Russian dressing on the side.
History of the Kotlety Pozharskie
The Kotlety Pozharskie is one of the foods listed in the book 1,000 Foods To Eat Before You Die, by Mimi Sheraton. It is #20 in my quest to try each and every one of the foods in the book.
The Pozharskie family created this dish in the 19th century in Russia. The Pozharskie's owned an inn and restaurant in Torjok. Torjok was a place between Moscow and St. Petersburg where travelers could stop, rest, and get a bite to eat. I can just imagine the delight of travelers who stopped here and then were treated to the Kotlety Pozharskie!
The cutlets (or kotlety) were originally made out of ground beef, with some game meats or veal mixed in. Nowadays, the cutlets are mostly made with ground chicken.
