If so, I have an easy and delicious stuffed Hatch chile recipe for you to enjoy!

Hatch peppers are perfect for making New Mexico Green Chile Sauce, and you can even enjoy them in ice cream!

But one of the simplest ways to enjoy this wonderful green chile is stuffed with cream cheese and wrapped with bacon, one of the great pleasures in life!

So first let me tell you a little bit about this wonderful chile, one of my favorites, and then I'll show you step by step how to make these stuffed Hatch chiles!

What are Hatch Chile Peppers?

Hatch chili peppers grow in the fertile Hatch valley of New Mexico, which is known as the Chile Capital of the World!

The soil and growing conditions are perfect for Hatch chiles, which are typically in season from mid-July through mid-October.

These New Mexico chilies have varying levels of heat, and their Scoville scale ratings range from about 1,500-2,500 SHU (Scoville Heat Units), which is about the same heat levels for Anaheim or poblano peppers.

However some Hatch chilies can be hotter than this, including the Lumbre Chile Pepper variety, which is the hottest normally grown in the Hatch valley (per FreshChileCo.com).

🥘 Ingredients

You only need 3 simple ingredients to make these stuffed chiles!

  • Hatch green chiles - feel free to sub Anaheim green chiles if you prefer or if fresh Hatch chiles are not available - it's your choice of whether to use mild peppers or hotter ones like the Lumbre Chile Pepper if you are fortunate enough to find these!
  • Bacon
  • Cream cheese - at room temperature

That's it!

So now on to the super easy instructions!

🔪 Instructions

You'll be excited to know that the prep time for this dish is only about 5 minutes!

Preheat your oven to 425F. Wash the chiles and pat dry. Use a sharp knife to cut them in half lengthwise as indicated in the picture.

Remove the pith and the seeds and then lay them flat to stuff them.

Remove the seeds and the pith.

Stuff the chiles with the cream cheese, using approximately ¼ of the cream cheese per chile, give or take.

Wrap each Hatch pepper with 2 slices of bacon. Place peppers in a rectangular baking dish or on a baking sheet.

Then wrap each with 2 slices of bacon.

Bake the stuffed peppers in the center of your oven for approximately 30 minutes. Check on them around 20 minutes in, and adjust the baking time as necessary.

You'll love serving these as an appetizer, side dish, or even just as a delicious snack.

As mentioned, this dish is best enjoyed straight from your oven. However, you can serve them reheated the next day if you like.

Consider doubling the recipe though, because these will disappear like lightning!

Where can I get fresh Hatch chile peppers?

You may be able to find them in your grocery store when they are in season, and online at Hatch Chile Store.

What green chile peppers can I substitute if Hatch chiles are not available?

Hatch chiles are preferred, however they are not always in season and available. I recommend using Anaheim peppers or even poblano chiles if Hatch chile peppers are not available.

Are Hatch chiles spicy?

You may find both "mild" and "hot" Hatch chiles available when you shop for them. Opt for "mild" if you are not a big fan of spicy chiles. The "hot" Hatch chiles do have a kick to them, so yes, I would call those spicy!

How can I store leftover stuffed green chiles?

Store any leftovers in an airtight container in your refrigerator, and enjoy within a couple of days.

Ingredients
  

  • 2 each Hatch green chiles on the small side, washed and cut down the middle lengthwise, seeds and pith removed
  • 4 oz cream cheese softened to room temperature (it's easier to work with at room temperature)
  • 8 each slices bacon use 2 slices per half of a Hatch chile

Notes

This recipe is easily doubled.  In fact, you may regret not doubling the recipe as these will go fast!
The stuffed peppers are best enjoyed hot out of your oven on the day they are prepared, but they do keep well in the fridge for a couple of days in an airtight container.

    From southwest Colorado. I have a little different way of preparing my green chilies using a small strip of bar b que brisket in the chili first then covering it with the cream cheese and then sprinkling crumbed cooked bacon on top of the cream cheese. Lightly press down on bacon pieces to hold in place. Cook chillies in oven or on the grill until cooked.
