No Bake Brownies For The Baking Challenged!

I'm one of those who is "baking challenged." I like to blame my oven for this but it could be just me. 😅

So, when I discovered that I could make brownies without baking them, I was all in!

This Is Not Just Any Brownie Though!

These brownies are not your typical no bake brownies. They are special because:

  • They are healthy! These decadent delights contain nutritious ingredients that you can feel good about eating!
  • You get a bit of caffeine due to the coffee concentrate in the brownies...hence the name "Wide Awake No Bake Brownies!

Like brownies, however, they are incredibly delicious! They have a rich chocolatey and coffee flavor and chewy texture which all of us love!

What Ingredients Do I Need To Make These Brownies?

You only need 4, yes 4, ingredients to make these heavenly treats! The caveat is that you truly should use the highest quality ingredients to obtain a superior no bake brownie. So, this is what you will need:

  • Dates (preferably pitted) - I highly recommend Medjool dates which are the best!
  • Organic Unsweetened Cocoa + Espresso from Cocoaxinc.com; you could use cacao or cocoa powder, but trust me on this...you will want to use this product! Plus the espresso in this gives you an extra jolt. 😃You may be able to find it at your grocery store, or click here to purchase on Amazon.
  • Walnuts (could sub pecans)

  • A package of Pitted Fresh Medjool Dates

By all means feel free to sub brands! However, the brands I have highlighted here are absolutely superb!

Let's Make These Wide Awake No Bake Brownies!

All you need to do to make these brownies is soak the dates in some hot water for around 5 minutes to soften them up. If your dates still have pits, this will allow you to easily remove the pits.

Process your walnuts in a food processor until they are broken up into small pieces. Then add the softened dates, coffee concentrate, and the cocoa or cacao to the food processor. Whiz for a bit until nicely combined and sticky.

Remove the mixture from the food processor, and then place in a small container (I used a 7.5" x 5.5" glass container). Press down to form a firm mixture and refrigerate for around an hour before serving.

These brownies are EXQUISITE. Rich with a chocolatey, nutty, and coffee flavor, they are the perfect decadent treat.

Just be sure not to eat them too close to bedtime. 😅

These Wide Awake No Bake Brownies are EXQUISITE. Rich with a chocolatey, nutty, and coffee flavor, they are the perfect decadent treat which will also keep you wide awake!

Equipment

  • Small food processor

Ingredients
  

  • 5 oz walnuts could sub pecans

Notes

This recipe makes 6 small or 4 large brownies.  Please be mindful that these brownies do contain caffeine, so it's probably best not to eat them too close to bedtime. 🙂
