Equipment

Ingredients

  • 1 each ribeye steak select a steak between 0.75 lb - 1 lb, and around 1 inch thick
  • ½ tablespoon olive oil for basting the steak
  • salt to season the steak to your taste
  • black pepper to season the steak to your taste

Cilantro Garlic Sauce

  • 4 cloves garlic minced (adjust amount to suit your taste - 4 cloves is quite garlicky)
  • 1 cup cilantro leaves tightly packed (can also include some of the cilantro stems)
  • salt to taste
  • pepper to taste

Instructions

  • Remove your steak from the refrigerator. Allow around 30 minutes to come to room temperature.
  • To make the zingy cilantro garlic sauce, combine garlic, cilantro, and olive oil in a food processor. Process just a few seconds until you get a lovely sauce. Add salt and pepper to taste.

  • Pat the steak dry with paper towels. Then use a baster to baste some olive oil to the front and the back of the steak. Season the front and the back of the steak liberally with salt and pepper.

  • Now, preheat your air fryer to 400 degrees f. Our intention is to air fry the steak at this temperature for around a cook time of 10 minutes, flipping half way through. This is for a medium-rare steak, with a target internal temperature of 135F. Insert the MEATER Thermometer if using, into your steak according to the MEATER instructions. Place the steak in your air fryer basket once it has been preheated to 400 degrees f. If you are cooking more than one steak, the best way is to be sure to place the steaks in a single layer and do not allow them to overlap.

  • Flip the steak after 5 minutes in the air fryer. If you have a digital thermometer, go ahead and check the internal temperature of the steak at this time.

  • We want to remove the ribeye when the internal temperature reaches around 125F. Set the air fryer to cook another 5 minutes. However, the most important thing is to adjust your time as needed according to what your thermometer reads.

  • Remove the steak when the internal temperature reaches 125F - 128F, and allow it to rest for a few minutes. The temperature will continue to rise while resting and should reach our target temperature of 135F in a few minutes.

  • We now have an amazingly delicious ribeye steak to enjoy! Drizzle the cilantro sauce over your tender steak to your heart's content. Now slice into the steak with your steak knife, and admire the beautiful red hue you will see in the steak's interior. Don't forget to behold the juices flowing from the steak. It truly is a thing of beauty!

Notes

This recipe is written with a medium-rare steak in mind, with a target internal temperature of 135F.  To achieve this we actually want to remove the steak from the air fryer when the internal temperature reaches around 128F. This is because you will need to allow the steak to rest. During resting, the temperature will continue to rise until it reaches our target temperature of 135F.
It's highly recommended to use a thermometer to ensure success with this recipe.  The best one to use is the MEATER Meat Thermometer, which tells you when to remove the steak from the air fryer.
You can also use a digital thermometer. Using a digital thermometer may require you to check the temperature a few times when the ribeye is cooking. It's perfectly fine to open up the air fryer from time to time and check the temperature of the steak. Just be aware that you will lose some heat each time you open the air fryer and will extend the length of cooking time required.
Have fun cooking up the BEST Ribeye in your air fryer!
