Ok, these Easy and Creamy Mashed Sweet Potatoes are to die for! Creamy, cheesy and oh so fluffy, these may just become your fave way to enjoy this great root veg!
cheese graterI use Zyliss brand cheese grater (can use a box grater)
Ingredients
1-1.25lbsweet potatoespeeled and cut into small pieces
½tssaltplus additional to salt the water
½tspepper
½tsgarlic powder
½cupParmesan cheesefreshly grated
¼cup heavy cream
6tablespoonbutter
1tablespoonchives minced
Instructions
Peel and cut up your sweet potatoes into small pieces. Place the sweet potato pieces in a saucepan and add enough water to cover by one inch. Add a pinch of salt, and bring this to the boil on medium high heat.
Cook the cut up sweet potato in lightly salted boiling water for 10 minutes or until fork tender then drain. Keep the water boiling on medium high heat, or turn it down a bit if the water is boiling over.
Now turn off the heat and return the drained sweet potatoes to the saucepan. Then add butter, seasonings, Parmesan cheese and heavy cream.
Use a hand mixer on a low setting to mix until the mash is super duper fluffy! If you don't have a hand mixer, you can use a masher it's all good!
Now mix in your chives, and add extra butter on top when it's served if you like!
