Equipment

  • 1 large covered skillet or pot

Ingredients

  • 1 lb green cabbage chopped
  • 1 medium tomato diced
  • 1 inch ginger peeled and minced
  • ½ onion minced
  • 5 cloves garlic minced
  • 5 each chilies optional but if using I recommend Thai chilies
  • ½ ts salt
  • ¼ ts pepper
  • ¼ ts cayenne
  • ¼ ts turmeric
  • 1 ts garam masala
  • 3 tablespoon ghee

Instructions

  • Begin by melting the ghee on medium-high heat. Then add minced onion, garlic, ginger, and chilies. Stir 3 minutes until softened, then add all the spices and stir one minute.
Minced onion, garlic, ginger, and chilies, and salt, pepper, cayenne, turmeric, and garam masala in oil in a large skillet.
  • Add cabbage and stir, then cover and lower the heat to medium. Cook 10 minutes and stir occasionally. Then add diced tomato and stir it in. Cover and cook another 10 minutes, stirring occasionally. Please note that if the mixture gets too dry at anytime, just add a bit of water or broth.
Cooked cabbage with seasonings and garlic, ginger, chilies, and onions and chopped tomato on top of the cabbage in a large skillet.
  • At the end of the cooking time, taste the dish and adjust for seasoning by adding additional salt, pepper, or other spices to your liking. Your cabbage dish should now be finished cooking and ready to enjoy with your family!

Notes

This flavorful dish is the perfect side to accompany your favorite Indian main meals! It could also be the center of a vegetarian meal accompanied by basmati rice, or some naan bread.
I like to serve it alongside Keema do Pyaza (lamb mince curry dish) or Indian Butter Chicken.
Keep this recipe handy for anytime you crave a delicious cabbage dish!
