Traditionally eaten in the South on New Year's Day, this delicious dish comprised of black eyed-peas, collards, onion, rice, and bacon deserves to be eaten any day! So quick and easy you'll have this on your dinner table in 35 minutes! Scrumptious!

Ingredients
  

  • ¼ lb bacon cut
  • 1.5 cup cooked white rice
  • 2 cups collard greens frozen
  • 15 oz black eyed peas canned, drained and rinsed
  • ¼ cup onion chopped
  • 1 tablespoon salt free seasoning or 1 teaspoon seasoning salt and ½ teaspoon black pepper
  • 1 teaspoon garlic powder

Instructions
 

  • Place the bacon into a large skillet, and fry it over medium heat.
  • Once the bacon starts to brown (do not drain the bacon grease), add in the collard greens.
  • Cook until the collards are tender, then add in the onions.

  • Sprinkle in the seasonings.
  • Next add in rice, and fold in.
  • Toss in the black eyed peas, and carefully fold everything until well combined.

  • Serve and enjoy!

Notes

Serve this with cornbread, which is gold in color and symbolic of wealth, for an extra dose of luck on New Year's Day, or just because!
