Instructions
Heat up olive oil in a large skillet on medium high
Heat up water for pasta.
Add garlic and chilis (if using) and stir for approximately 1 minute
Add pancetta, and pan fry for around 4-5 minutes. Stir frequently
Meanwhile, cook pasta according to directions. IMPORTANT - reserve 1 cup of the cooking water, taken just prior to draining the pasta.
Turn heat down to medium and add peas. Stir occasionally for around 2-3 minutes. Add a pinch of salt and pepper and stir. Keep on low until the pasta is ready.
Just before the pasta is finished cooking, reserve 1 cup of the cooking water. Drain the pasta once it is finished, and add the pasta to your skillet.
Stir to incorporate all the ingredients, and then add the reserved cooking water, a little at a time, until your pasta is smooth and silky, and doesn't stick together.
Add salt and pepper to taste, and enjoy!
Notes
Sprinkle a generous amount of parmesan on top, and fresh pepper if desired. Enjoy this savory and delectable pancetta pasta!
