2Thai chilisminced (leave out if you prefer a milder dish)
1/2green bell peppersliced (seeds and pith removed)
1/2yellow bell peppersliced (seeds and pith removed)
1/2red bell peppersliced (seeds and pith removed)
salt to taste
1/4cupvegetable stock or water
Add the olive oil to a large saute pan (that can be covered) on medium high. Once the oil is hot add the onion and stir fry for around 5 minutes until softened. Then add the garam masala and turmeric. Stir constantly for 1 minute.
Add the cauliflower and stir. Lower the heat to around med-low to medium, and add 1/4 cup vegetable stock or water. Cover, and cook for around 10 minutes.
Remove the cover, and add the chilis and sliced bell peppers. Stir, cover, and cook for an additional 5 minutes. Add salt to taste.
Enjoy this nutritious side dish as a side to a delicious Indian curry, or with rice!
