- 8 oz cabbage shredded
- ⅓ cup carrot shredded
- ½ cup buttermilk
- ½ cup mayonnaise
- 2 tablespoon lemon juice
- 1 tablespoon white vinegar could sub apple cider vinegar
- ½ ts salt plus additional to taste
- ½ ts pepper plus additional to taste
- ¾ cup cheddar cheese shredded
Use a sharp knife to shred cabbage and carrot. You could also use your food processor with your shredding blade to shred the vegetables. Or for ease of preparation you can use a bag of pre-shredded coleslaw mix that you can find at your grocery store.
Place all of the ingredients in a large mixing bowl and stir to combine well.
Taste and add more salt and pepper to taste if you like. Refrigerate in an airtight container until ready to enjoy!
Feel free to use a bag of coleslaw mix for ease of preparation and to save time.
It's best to let this coleslaw chill in your fridge for a few hours before enjoying. This gives time for the flavors to meld together so your coleslaw tastes better!
