Equipment

  • 1 mixing bowl

Ingredients
  

  • 8 oz cabbage shredded
  • cup carrot shredded
  • ½ cup buttermilk
  • ½ cup mayonnaise
  • 2 tablespoon lemon juice
  • 1 tablespoon white vinegar could sub apple cider vinegar
  • ½ ts salt plus additional to taste
  • ½ ts pepper plus additional to taste
  • ¾ cup cheddar cheese shredded

Instructions
 

  • Use a sharp knife to shred cabbage and carrot. You could also use your food processor with your shredding blade to shred the vegetables. Or for ease of preparation you can use a bag of pre-shredded coleslaw mix that you can find at your grocery store.
  • Place all of the ingredients in a large mixing bowl and stir to combine well.

  • Taste and add more salt and pepper to taste if you like. Refrigerate in an airtight container until ready to enjoy!

Notes

Feel free to use a bag of coleslaw mix for ease of preparation and to save time. 
It's best to let this coleslaw chill in your fridge for a few hours before enjoying.  This gives time for the flavors to meld together so your coleslaw tastes better!
There is a little natural sugar in this recipe which comes from the buttermilk.
