Equipment

  • Large skillet with cover

Ingredients

  • 1 packet CASI Terlingua Championship Chili Recipe Seasoning
  • 2 lbs beef either ground, chili grind, or cubed (I used ground beef)
  • 6 oz tomato paste
  • 4 cups chicken broth
  • 2 serrano peppers diced (optional but I used more than 2 because I love hot and spicy chili!)

Optional Toppings

  • cilantro
  • jalapenos sliced
  • sour cream
  • cheese

Instructions

  • Brown the ground beef and then drain the fat.
  • Add the tomato paste, chicken broth, serrano peppers, and the seasoning mix. Bring to the boil, and then lower to a simmer.
Browned ground beef, chicken broth, tomato paste, chili seasoning, and diced serrano peppers in a skillet
  • Simmer covered for around 1 hr and 15 minutes.
  • If the sauce is too think for your liking you can remove the cover and turn up the heat a bit to cook it down. However, I found it was nice and rich and thick after the 1:15 min simmer!
