I am working my way through the foods that are listed in the book 1,000 Foods to Eat Before You Die by Mimi Sheraton. This is called my 1,000 Foods to Eat Project. Orange Salads, listed in the North African section of the book, are beautiful dishes in Moroccan cuisine. This is food #59 in my project.

Ingredients Needed For This Salad

Olive oil, cumin, parsley, red chilies, lemon, blood oranges, and olives on a wooden board

You will need the following ingredients for this salad:

  • Oranges - you can use any oranges that you like. I opted for blood oranges as they were in season. Mix and match different oranges for maximum effect!
  • Olive oil - use a good quality olive oil for the dressing
  • Cumin seeds - will include in the dressing as well as scattering some on top of the salad
  • Parsley - can use Italian or curly parsley
  • Lemon - juiced for the dressing
  • Shallot (can sub red onion)
  • Chilies - I used red Thai birds eye chilies; you can sub red pepper flakes
  • Olives - pitted olives (can use green or black, or a mixture of both)

While gathering these colorful ingredients, just think of how colorful the salad will be once assembled!

Easy Instructions!

It's super simple to make this salad! We'll start by making the dressing. Combine olive oil, lemon juice, minced chilies, and some of the cumin seeds in a small bowl or salad dressing shaker. Whisk or shake (depending on the container you use), and then set this aside for around an hour to let the flavors infuse a bit.

Prepare the oranges by slicing them into disks as pictured below. Cut the pith and the rind off the edges of the oranges. Cut the shallot (or red onion) into rings, and mince the parsley.

Assemble your salad by laying the orange slices on a plate. Top with olives, shallots, parsley, cumin seeds, and a generous amount of dressing.

Ingredients
  

  • 2 oranges slice into disks (about ¼") and cut the pith and the rind off
  • 1 oz olives pitted; can use black or green olives
  • 1 small shallot peeled and cut into rings; can sub ¼ small red onion peeled and cut into rings
  • 1 tablespoon parsley minced; can use Italian or curly parsley

Dressing

  • 4 tablespoon olive oil
  • 1 ts cumin seeds split; ⅔ will go in the dressing and ⅓ sprinkled on top
  • 1 lemon juiced
  • 2 birds eye chilies minced (deseed if you like it less spicy or leave out completely); can sub ¼ ts red chili flakes

Instructions
 

  • To make the dressing, combine olive oil, lemon juice, minced chilies, and some of the cumin seeds in a small bowl or salad dressing shaker. Whisk or shake (depending on the container you use), and then set this aside for around an hour to let the flavors infuse a bit.

Notes

This dish is absolutely wonderful paired with the Classic Morrocan Chicken Tagine and couscous!
Opt for colorful blood oranges if you can get them.  Cara cara oranges are also nice, and it's lovely to mix and match different colored oranges for maximum effect.
Ideally leave the dressing for around an hour to allow the flavors to infuse.  However, you can use it right away if needed. 
You most likely will have extra dressing left over which would go great with a leafy green salad.

I can't believe it took me so long to try a Cobb salad. This salad is absolutely delicious, colorful, and calorific! In short, it's terrific. 🙂

Californian Inspired Cobb Salad

I will always remember Feb 4, 2019 as the day that I had my first Cobb salad. It will be the first of many and I can't wait to have this delicious salad again!

The Origin of The Cobb Salad

This delicious and indulgent salad came to be in the 1930s at the Brown Derby restaurant, in Los Angeles, California. Mr. Robert Cobb owned the Brown Derby Restaurant, and the salad is named after him.

There are several stories about how the salad came to be. One version is that one evening a very hungry Mr. Cobb gathered leftovers that he found in the restaurant's kitchen. Once put together, he topped it with a vinaigrette, and so the Cobb salad was born. Another version says that Mr. Cobb put the salad together for a friend (Sid Grauman, founder of Grauman's Chinese Theater). His friend had dental work so everything had to be chopped fine.

The Connection to I Love Lucy 🙂

One I Love Lucy episode famously featured The Brown Derby Restaurant. In this episode, Lucille Ball has a hilarious run-in with William Holden. Mr. Holden orders a Cobb salad at the Brown Derby by the way. 🙂 This episode is called "LA at Last" or "Hollywood at Last." Please watch Lucy's ridiculous antics on CBS All Access if you have it! It is Season 4, Episode 17. It is a hoot!!

Californian Inspired Cobb Salad

This delicious Cobb salad is seriously indulgent!  Enjoy with a glass of Chardonnay and some nice crusty bread!

Ingredients
  

For the salad

  • 6 slices bacon crumbled into bite sized pieces
  • 1 tablespoon olive oil
  • 1 lb chicken tenders or chicken breast chopped into bite sized pieces
  • 10 oz romaine lettuce cut up into bite sized pieces for your salad
  • 3 eggs hardboiled, peeled, and chopped
  • 3 green onions sliced thinly
  • ½ pint cherry tomatoes halved
  • 1 avocado chopped into small pieces
  • Roquefort cheese crumbled into small pieces

For the vinaigrette

  • 2 cloves garlic minced
  • ¼ cup red wine vinegar
  • ¾ cup olive oil
  • ½ ts Worcestershire sauce
  • squeeze lemon
  • ¼ ts salt
  • ¼ ts pepper

Instructions
 

For the vinaigrette

  • Add all vinaigrette ingredients to a bowl or salad dressing shaker, and either whisk or shake until well combined. 
    Red Wine Vinegar Vinaigrette

For the salad

  • Place your eggs in a saucepan, and place just enough cold water to cover them.  Place on your stove on high, until water is boiling and large bubbles are breaking over their surface.  Remove from the heat and leave covered for 15 minutes.  Plunge into ice cold water to cool down, and then peel.  
  • Fry your bacon (cut into bite sized pieces) until crisp and browned, and drain on paper towels.
    Bacon Chicken and Eggs
  • Season both sides of your chicken with salt and pepper.  Heat up 1 tablespoon olive oil on med high heat, then cook both sides of the chicken until browned and cooked through.  Cut into bite sized pieces. 
  • Assemble each salad by laying down ⅓ of the romaine lettuce as your salad bed.  Top with ⅓ of all of your ingredients:  chicken, bacon, sliced avocado, halved tomatoes, chopped eggs, sliced green onion, and Roquefort cheese.

  • Top with your red wine vinegar vinaigrette and enjoy!

Notes

To save time, buy chicken and bacon that are already cooked, and eggs that have already been hardboiled.  The Cobb salad is high in calories so beware!  Enjoy this as as a luxurious indulgence!

Beat The Heat With This Refreshing Authentic Thai Cucumber Salad!

Thai cuisine is absolutely one of my favorites!! And one of my favorite Thai dishes is the Thai cucumber salad which is superb for summer months!

"Cool as a cucumber" is a well known phrase. It actually refers to being calm and composed rather than low in temperature. However the phrase comes from the cool traits of the cucumber! From the University of Arkansas Division of Agriculture: "This phrase may have originated from the fact that even in hot weather, the inside of cucumbers are approximately 20 degrees cooler than the outside air." Pretty cool!

This Thai Cucumber Salad is so refreshing and will definitely help you beat the heat! It is the perfect summer side dish!

What Vegetables Are In This Cool Cucumber Salad?

Sliced red onion, sliced green onion, half of a yellow onion, sliced cucumber, cherry tomatoes cut in half, cucumber with skin peeled off in intervals

The vegetables in this salad include fresh cucumbers, green onions, onion, and cherry tomatoes.

Feel free to use yellow or red onion in this easy Thai cucumber salad recipe.

For visual appeal, it's super fun to peel the cucumber in stripes as pictured above. To prep the vegetables, slice the cucumber into thin slices. Then slice the onion, cut the green onion on the bias, and finally cut the cherry tomatoes into halves. Now you're ready to add the Thai Cucumber salad dressing!

What Is In The Thai Cucumber Salad Dressing?

The sauce is comprised of just 3 ingredients! They are:

  • White Sugar
  • Fish sauce (I used Three Crabs Brand)
  • Rice vinegar (aka rice wine vinegar)
Cucumber, bottles of fish sauce and rice vinegar, green onion, cherry tomatoes, red onion, yellow onion, and sugar in a glass bowl

My favorite fish sauce is the Three Crabs Brand. I am including a link to Amazon for Three Crabs Brand Fish Sauce for convenience if you would like to purchase on Amazon. Or you should be able to find this and the rice vinegar at your local grocery store or Asian market.

Instructions

It's so easy to make this authentic Thai cucumber salad recipe!

Begin by adding the 2 teaspoons of sugar, 6 teaspoons of fish sauce, and 2 tablespoons of tangy rice vinegar to a small bowl. Next, add your prepped veggies to a large bowl.

Then simply combine the sliced cucumbers and other prepped veggies and the sauce and voila! Your Thai Cucumber Salad is ready in about 10 minutes!

A Mild (Not Spicy) Thai Dish!

Not every Thai dish is spicy! This simple recipe for Thai Cucumber Salad has a mild flavor and is absolutely delicious! No Thai chiles are required for this recipe!

There are 5 flavors of Thai cuisine: sweet, sour, spicy, salty, and bitter. To get it just right, you try to find the right balance of flavors in the dishes, and the end result is complex and amazing. It is my understanding that you need at least 2 of these flavors in a Thai dish in order for it to taste right. In this dish you will taste a bit of sour, some sweet, and also wonderful salt!

What type of cucumber should I use for this recipe?

Use regular or English cucumbers for this dish!

Can I eat this salad right away?

Yes! As soon as it's ready you can eat it. I do recommend giving it a couple of hours in the fridge for the flavors to infuse though if you have time!

How long will this Thai cucumber salad keep in the refrigerator?

This salad is best consumed within a day or two.

What can I sub for Rice Vinegar?

If you don't have rice vinegar, you could sub apple cider vinegar, seasoned rice vinegar, or white wine vinegar.

This delicious Thai cucumber salad is so easy to prepare!  If you have time, allow the flavors to infuse for a few hours in the fridge.  Enjoy!

Ingredients
  

  • 1 cucumber peeled in stripes (see photo) and sliced thinly
  • ¼ yellow or red onion sliced thinly
  • 1 green onion cut on the bias
  • 6 cherry tomatoes cut in half
  • 2 ts white sugar
  • 2 tablespoon thai fish sauce
  • 2 tablespoon rice wine vinegar

Instructions
 

  • Add all prepped vegetables to a bowl.

  • In a separate bowl mix the sugar, fish sauce, and rice wine vinegar.

  • Add the sugar, fish sauce, and rice wine vinegar to the vegetables and mix well.
  • Taste! You should be able to taste a mixture of sweet (sugar), salty (fish sauce), and sour (vinegar).

Notes

Eat immediately or better yet, allow the flavors to infuse the vegetables for a couple of hours in the fridge. My preference is letting it marinade for several hours as I think it tastes better that way.

Beets Are So Good For You!

Recently, my mother had mentioned that a friend of hers recommended eating beets to help lower her blood pressure. I did a little research online and found that in addition to help keeping blood pressure in check, there are many other health benefits of beets and they are a powerhouse when it comes to nutrients. Additionally, they may help improve athletic performance. I enjoyed this salad last evening and had a great run this morning...now I know why! 😃

Roast Your Own Beets Or Use Prepared Beets

You can either roast your own beets (very easy!) or use prepared beets to make things even simpler. One good option is the Love Beets brand, which you can find here on Amazon.

Roasting your own beets is super easy! Basically all you need to do is wrap each beet in foil and roast in a 400F oven for around 1 hr. The beets should be wonderfully tender and ready to enjoy!

Beautiful Roasted Beets and Spinach Salad

Enjoy this beautiful, delicious, and healthy salad!  Use prepared beets for easier preparation, or roast your own beets using the instructions below.

Ingredients
  

  • 3 beets medium sized, without tops
  • 5 oz spinach leaves
  • balsamic vinegar
  • salt to taste
  • pepper to taste
  • parmesan cheese grated or shredded (if desired)

Instructions
 

  • Preheat your oven to 400 degrees. Rinse and pat dry each beet. Wrap each beet individually in foil. Place the wrapped beets on a cookie sheet or oven proof container, and roast for approximately 1 hr.
  • Remove from oven, and carefully check to ensure the beet is cooked through by piercing with a fork. If the fork is able to penetrate all the way through, the beet is ready. Open the foil, and allow the beets to completely cool. Once cool, you can peel the skin off very easily. You may want to use disposable gloves to keep your hands from staining. Slice each beet into thin slices.
  • Arrange spinach on a salad plate and add enough sliced beets to your liking. Add salt and pepper to taste, and finish with a splash or two of balsamic vinegar. Sprinkle some shredded parmesan cheese if desired.

Notes

You may have more beets than needed for your salad, so you can enjoy them over the course of a few days as a healthy snack!
